If you only want to replace the texture, I recommend this (http://www.sims2wiki.info/wiki.php?title=Tutorials:Default_Replace_ANY_Sims_2_Texture) tutorial at the Wiki. Hope this helps you a bit :]

I too would like to know how to make default replacement outfits, however I want to do something a bit more tricky - I want to replace the mesh, texture and alpha files. I know this is possible as I have seen it done before but I don't know how to do it.
I am familiar with making default replacement skins using a template default replacement set (ie just replacing the textures).

Simulitis - That tutorial is written by me, but is not finished yet so might be a little confusing. ;)

For meshes, you do up to part 3 but skip the Fix Integrity step - that's what makes a mesh a non-default. Then continue otherwise.
