This is a challenge that I've been thinking for myself once TS3Pets comes out, and I figured I'd write this down here in case someone else likes the idea and wants to try or has a good idea or a suggestion to make it better.
Goal:
The goal is to play Legacy-style but only make money through horses. Now whether that is breeding or competing is up to you, but the main money should be made by horses. The hard rule is no full-time jobs for sims.
(Note; I'm not going to expressly forbid any and all other moneymaking since I think 50§ here and there for painting etc. is fine, but as a guideline if you start making masterpieces over 1000§ you might want to gift them to other sims)
Start:
You start Legacy-style with one founder human sim. This one you can make however you like. Now, I'm not sure how pets is going to work so how to get your founding horse(s) is a little fuzzy. If adding horse to a family makes your starting money greater I wouldn't start like that. I know you can buy a horse from the Equestrian Center, so if your sim buys a lot and a horse (s)he should have nice low money for a while. Going should be rough until the rough gets going! :) Plop on a lot, preferably large. Again, Legacy-lots recommended, but I'm not going to make it a hard rule since some people's computers can't handle or they just don't like too large lots.
Multiplying:
Your sim needs to find a spouse and make an heir. Spouses should not be in the starter family, and not merged in but should be wooed on your founders spare time. (If you are afraid of the ugly-cooties, plop a spouse on a lot and have your sim woo them from there, however I'd randomise the personality so you can't tailormake your dream spouse, just like townies have their bad and their good)
When it comes to babies, everytime I get to choose a trait I randomise it three times, and then choose from those three traits. I recommend this so you don't get to tailormake your sims into perfection.
Example: So I get baby Anna's trait-picking, I click the dice three times. First time I get Good, second time I get Light Sleeper and third time I get Neurotic. Now I don't have to take Neurotic (I would though...), if I want I can manually choose Good or LS.
Horses:
Now, you don't need to have two horses and make them breed and have a foal, even though you can. If you are more into competing in Jumping, Cross-country or Racing, you can have one horse that you train and when it dies buy a new horse to train. Or you can have a mare and breed her in the Equestrian Center to get a foal. This is up to you. but your money-making can be done either competing or selling horses.
Flavours:
1. Easy-going. Old style, do whatever to earn money, Horseman self-employment available.
2. Breeder. Only get money by breeding, so either offering your horse(s) for stud or impregnating your mares at the Equestrian Center.
3. Trainer. Buy (NOT adopt) horses from EC, train them as much as you please and sell back.
4. Eventer. ONLY get money from competitions.
5. Hobo with Horse. When making a sim, also create a horse from start. When placed on an empty lot, take all funds away. :D Note: This is only an extra-start. You still need to pick your moneymaking-way. So for example Hobo+Eventer.
Themes:
--Western American Ranch. Cowboy hats and boots etc.
--Native American Tribe. Braids and earthy colours, Hut/Longhouse style houses.
--Gypsies. Bright colours, Caravan-style houses.
--Circus. Even brighter colours, Two-colour Tents and caravans/trailers.
--English nobility, Manors with tennis courts and five-o'clock tea.
Pick one or none and suggest more!
Hard rules: :deal:

No cheating
No starting off with a spouse&kids
No tailor-made personalities (founder doesn't count)
I will likely tweak some rules and make things harder/easier depending on how I find the EP. Hope you like my idea and if you want to plan your family here go ahead! :p
EDIT1: There is a Jockey-profession, it works just like signing up to be a painter etc. You get riding skill and go sign up at the City Hall. It's of course accepted, but only for your "main" sim, When your heir takes over the earning your old main must retire/quit.
