Ok here's my issue...i see all these carrots and onions on the ground of my lot...it does have a large garden...and i'm noticing that suddenly every few days my onions and carrots vanish? Are my horses eating them? Highly irritating... :llama:

Horses can actually dig up onions, carrots, and potatoes (I think I got garlic once, too - all the root vegetables!), which is why you're seeing them everywhere. You should be able to click the vegetable and choose "Plant Here" if you want to grow the plant - but I believe horses will eat THOSE too! - or you can pick it up and put it in your inventory. IIRC, digging up vegetables is associated with the Piggy trait - it reinforces it, and horses with it will tend to dig up more vegetables.
My solution for keeping my horse out of my garden was to build a fence around the vegetable plot and use a single-width gate for access - horses can only use double-wide gates, so they can't get in and eat my plants! (If you have a small lot, fencing off part of it can cause routing issues with the "Gallop Around" command, but for large lots, it's not a problem.)

Isn't there some wild animal that goes after them as well?

Yeah, deer can do it too.

Knew it was the horses! Oddly enough there is a single gated fence as I knew deer and such would chew up my crops. That's my confusion how are they still getting to the plants that are on the far side of the lot...

Hmm, I've never had that with mine - at least not so far!
Is there maybe another way into the enclosure, such as through a barn, or perhaps a double-wide door leading from the house to the yard? I had to redesign a house when I found my horse in the living room once. Nothing like coming home from work to a puddle of horse pee in the middle of the floor...
