Default Changing uniforms
Is it possible to default replace a career uniform, just changing it's visual appereance?

Yes. You have to make a default replacement sim outfit (SIMO). I made a tool to make SIMO files and posted it for beta test here: http://www.modthesims.info/showthread.php?t=440057
