Default object\mod\hack to easily substract funds
I've been playing TS2 with my own rules for a few years, and one of them was that all prices were paid as x10. So, an easel worth 300 was worth 3000.

After switching to TS3 I found out that the game is too easy to be engaging, sims get uber-rich without effort (just like in default TS2), so I really need to find a way to set the same rule up! There was a brilliant mod-object called ATM Machine in TS2. Your sim buys it, puts on the lot and can substract 100, 200, 1000, etc. amount of money easily.

I know about the existence of familyfunds cheat, but I can't do all the math in my head all the time when I need to substract funds. And after trying to use that cheat with a minus to substract without counting I found out that doesn't work. And the cheat doesn't work too often anyway, if you have sims with different second names on the lot, then it won't work even with correct family name that the house displays.

Surely there is something to easily substract funds, right?

I sometimes play a similar style. But, I only increase lot values x 10 and start broke on a small lot. Anyway, one mod that makes the familyfunds cheat work better is Nraas Master Controller. It will allow you to subtract or add.

Grab the cheats module on that page, too. To use it: click your sim, then...nraas>household>familyfunds. Sometimes you need to select your family from a list.

NRaas Story Progression + Money (https://nraas.wikispaces.com/StoryProgression) will add a flexible taxation system to the game. I'm sure the other mods do this too, but this allows you to set income and property taxes, as well as a host of other options.

I can't play without it.
