I'd love a mod to prevent dorm cooks from clearing away untouched food. Poor Emil worked his butt off to feed his new dorm for the next several days, and the cook just wiped it all away within a few hours!

It is still better than playing with several playables in dorm at one point you will find out that dorm's fridge is fulfilled with hundreds of leftovers.

Why is that better? Leftovers are great for preventing starvation when the cook's not around!

Sims won't automatically fetch leftovers, though, unless you have a hack. (I think Dizzy made it, although I would have to check.)

unrelated to that::
-sims also have 4-player chess; perhaps also 2-player checkers. and maybe also Chinese Checkers (6-player).
-dartboard and pinball being able to have more than 2 players at a time.

I wish there were ways to "lock" keyboard shortcuts... it would be very helpful, for instance, if there were a way to avoid having to hold down the SHIFT key to place more of everything, or if there were a way to have repeated wall hanging objects appear at the same (adjusted) height.

Something that allows you to interact with ghosts when they spawn, just like interacting with living sims.

I was just finishing up my post office/bank and thought how cool it would be to have a policeman NPC spawner nearby.

Sticky Keys? Hit the Shit button five times and it should pop up. A bit of a clumsy solution but perhaps it could work.

You mean like a security guard? That would be cool! Maybe they can put a stop to the UC too.

Yeah He wouldn't need to do anything, just standing around in the right spot would add a nice touch to certain buildings like banks or museums.

I would love it if you could specify the color light that lighting fixtures emit. Some lights have a noticeably harsh blue-white light, and others have a warmer, more yellow-orange illumination. Both of them can be perfect in different circumstances, but unfortunately, often the fixtures themselves do NOT match up with the light you want.

the color emitted from lights (or from any light-emitting object); I guess you mean within game. I take such colors can only be edited out of game.

I have seen a mod here on MTS which swaps out the light effects of some of the Maxis lights. No idea who did it or when, alas, and when you did find it, it might not do exactly what you want - but it would be a start.

Zarathustra, Almighty Hat made an everything light mod, called World Lit by Fire. http://hat-plays-sims.dreamwidth.org/18044.html I don't think that's what you want, but Almighty Hat is pretty darned good at explaining what she did and how, and it might be a good starting point.
