Is there some system or specific actions to do to gain customer stars?

Make them happy.
Details depend on the business, but having positive interactions with them is always helpful. If you are selling (other than tickets) don't make them wait too long, and show them some of the merchandise. If it is a makeover station, "offer makeover"s rather than just standing next to the chair. And be VERY quick with "free makeover" offers for customers who got a bad one. Preferably from a different stylist.

I have no problem with shops that sell things, I just go around selling, restocking and being paid, and the stars simply appear from time to time. It's the "pay by hour" wich leave me without knowing exactly what to do.

Some customers want to be sold to, others want to browse on their own. You'll have to use a little trial and error to figure out who wants what. But when a customer comes in and the only sell option is "May I help you", then I've found that usually generates stars once you've helped them. But being cashed out quickly can generate them too. Also, good deals (smaller markup), high environment scores and positive social interactions will gain stars.

The 'May I help you' gains stars, but I don't know of any other specific ways. Just help them out and be nice, I guess. I don't play shops that often..
