That is usually done with the normal counters and some cheats.
You will need:
moveobjects on
boolprop snapobjectstogrid false
boolprop allow45degreeangleofrotation true
Grab another counter and turn it in the right direction ("," and "." on my keyboard, find the "m" and try the next two keys to the right).
Now put the counter where you want it to be. To fill a triangle you will need two counters.
When you're done don't forget:
moveobjects off
boolprop snapobjectstogrid true
I hope my description isn't too confusing. :)

Problem with this... The end of the angled counter sticks out the back side of the wall.

Did you use snapobjectstogrid false? Because with that you can sort of shuffle them together.

Yes i did. I had forgotten to use the boolProp allow45DegreeAngleOfRotation true cheat. So i went in game and tried it. but it didnt look right... You have to use two counters to fill the space, and by doing that the counter handles look all messed up. Also you cant put any objects like dishwashers in the counter against the regular wall because it blends half way into the angled counter. Nice cheat an all but someone really just needs to make a mesh mod for angled counters.

Begoth_Princess, you're right, that simply doesn't work. I'm surprised that no one has made a mesh for angled counters. Also I think counters by nature in the game are too wide. I always thought how stupid and annoying it is that when you place them normally (without boolProp snapObjectsToGrid false) that they cut into the wall by a couple of inches. You can even see in the photo above taken by Greenbeans a little bit, and those counters were probably placed there without have snapObjects set to false. But, if you actually snap them there with it set to false like I do, you can't even fit 3 counters in a 3 space area without them intersecting (either intersecting in the wall or intersecting them into themselves) have you noticed that? I hate that, because it's almost like there needs to be a mini counter that fits the space that is left after you fit 2 counters next to each other and don't have room for the third one.
